- Para el Bizcochuelo: Batir huevos y azúcar hasta que dupliquen su tamaño. Agregar manteca derretida y leche. Batir.
- Añadir harina. Batir hasta que quede una mezcla homogénea a punto letra (poder dibujar una A con lo que cae del batidor sin que se unda)
- Enmantecar molde y hornear a 180°-200° por 40 minutos o hasta pinchar con un cuchillo en el centro y que salga limpio
- Para la crema: A baño maría con fuego mínimo batir constantemente las yemas con el azúcar por 8 minutos (sin que se cocine la yema). Fuera del fuego seguir batiendo hasta que quede una mezcla cremosa casi blanca (queda un poco amarillenta).
- Batir mascarpone con queso crema. Una vez que tomó un poco de cuerpo agregar las yemas azucaradas anteriores. Batir hasta incorporar bien.
- Por otro lado, batir las claras a nieve. Incorporarlas con movimientos envolventes a la mezcla anterior.
- Almíbar: Poner al fuego el agua y el azúcar y cuando rompa hervor dejar entre 3 a 5 minutos hirviendo.
- Una vez retirado del fuego, agregar el café y el coñac.
- Armado: Cortar el Bnzcochuelo en 3 capaz y pincelar cada capa con el almíbar o mojar las vainillas en el mismo.
- Poner una capa de bizcochuelo y una crema, así 3 veces en total.
- Cubrir todo con la crema y espolvorear arriba con cacao amargo (opcional).
