  5. Separamos las claras de las yemas y en un bol echamos las yemas junto al agua con el azúcar y la gelatina disuelta. Batimos hasta que se integren.
  6. Montamos las claras a punto de nieve, reservamos.
    Echamos el queso mascarpone en el bol poco a poco y mezclamos.
  7. Ahora echamos las claras y un chorro de brandy, mezclamos todo bien y reservamos en la nevera mientras montamos la tarta.
  8. Engrasamos el molde y ponemos los bizcochos alrededor, estos no los he empapado y los he cortado. Ahora ponemos los de la base, empapándolos con el café y un chorrito de brandy.
  9. Echamos la mezcla que teníamos en la nevera y la echamos por encima de los bizcochos rellenando hasta la mitad, ponemos otra capa de bizcochos empapados y echamos el resto de la mezcla.
  10. Metemos en la nevera y espolvoreamos con un colador el cacao en polvo.
    Mejor dejarlo reposando en la nevera de un día para otro.
