- Antes que nada preparamos el almíbar de café. Poner dentro de una ollita el agua y el azúcar. Una vez que hierve contar 2 minutos y apagar. Agregar el café instantáneo y una vez frío el licor de café a gusto.
- Poner en un recipiente apto para baño maría las yema con el azúcar. Llevar sobre fuego a baño maría hasta alcanzar los 85º sin dejar de batir. No tenes termómetro ? con tu dedo apenas tocas la crema y debe quemar, pero ojo no la pases o las yemas coagularán.
- Retirar, pasar por un tamiz o colador para filtar cualquier grumito y batir hasta enfriar. Reservar
- Batir la crema de leche a 3/4 puntos.
- Al batido de yemas y azúcar agregar el queso en 3 partes e integrar muy bien cada vez.
- Luego por la crema de leche batida.
- Y por último agregar la gelatina previamente hidratada en los 20 cc de agua y disuelta (20 segundos en el micro). Antes de agregar la gelatina equiparar un poco la temperatura. Para eso agregar una o 2 cdas de crema de queso, integrar y volcar de golpe a la preparación batiendo rápidamente.
- Lista la crema ya nos disponemos al armado del postre. Poner una base de vainillas previamente pasadas por el almíbar de café en la fuente en que lo presentarás. Yo utilicé una fuente rectangular de unos 15 x 25 aproximadamente. Volcar sobre ellas 1/3 de la crema de queso.
- Haremos 3 capas de vainillas alternadas con crema y terminaremos con la crema de queso. Llevar a la heladera mínimo 5 o 6 horas. Lo ideal es de un día para otro.
- Yo en mi ansiedad me olvidé pero luego de cada capa de vainillas se debe espolvorear con cacao amargo 😭. Al momento de servir espolvorear nuevamente con cacao.
