En fin debo ir a Asturias y ver como lo hacen. Por los momentos puedo decir que para el gusto las dos recetas de Fabada que tengo están muy ricas.
Hoy las he elaborado de la forma que hago las legumbres pero añadiendo las carnes que amerita este tipo de plato como son el compango asturiano compuesto por morcilla, chorizo, lacón y panceta oreada.

- 1/4 de kilo de fabes
- 1 cucharadita bicarbonato
- 2 cucharadas sofrito. (cebolla, pimiento y ajo)
- La mitad de un compango asturiano. (lacón, panceta, morcilla, chorizo)
- 1 cucharada salsa de tomate casera
- 1 cucharadita comino
- 1 cucharadita pimentón dulce
- 1 hoja laurel
- Sal gruesa (+/- media cucharada, depende de la sal del compango)
Steps to make to make Fabada
- La noche anterior deja remojando las fabes con el bicarbonato y suficiente agua, hasta taparlas.
Al día siguiente coloca otra cacerola con agua y deja hervir, en ese momento añade el compango entero (o el que desees usar) cocina unos cinco minutos, retira y añade a la cacerola donde están las fabes. - Añade los demás ingredientes menos la sal y cocina a fuego medio bajo con la tapa hasta que estén tiernas.
Añade la sal necesaria y sigue cocinando.
Retira de la cacerola y corta más pequeño las piezas de chorizo, morcilla, lacón y panceta, integra nuevamente a las legumbres.
Sirve caliente.
