Holaa!! Esta es mi manera de hacer la fabada asturiana, claro yo la hago a mi modo, pero basándome en la receta asturiana, con los elementos que tenemos en la isla y no tan contundente, porque hace calor!! Besos!!

- 1 kilo judías para fabada tipo garrafón o fabes, o la que os guste
- 1 chorizo bueno tipo asturiano
- 1 morcilla
- 250 g panceta o bacón en un trozo
- 1 huesito de jamón
- 150 g costilla de cerdo en un trozo
- 1 cebolla
- 1/2 pimiento verde
- 1/4 pimiento rojo
- una cucharadita pimentón bueno
- ramas de tomillo opcional,clavillo
- sal o pastilla de caldo
- un vaso vino rosado
- Si os gusta el picante añadir media cucharadita de pimentón picante,yo lo eché!!

- Dejar las judías mínimo 12 horas en remojo,junto con la costilla salada y si usáis hueso de jamón ,yo lo pondría aunque no tenia y aproveché varias lonchas de jamón serrano,q se echa en el guiso. Al día siguiente tirar esa agua y poner a guisar las judías con agua suficiente,darse cuenta q han doblado el tamaño!!
- Echar cdo empiece a hervir,un trzo de los dos pimientos,y un trocito de cebolla donde clavamos el clavillo,la pastilla de caldo opcional-el chorizo,la panceta,la costilla, el hueso jamón ,y el pimentón,espumar si fuera necesario,y asustar con agua fría mínimo tres veces,cuando veamos q lo necesite durante cocción, y dejar a fuego suave;!
- Hacer un sofrito con la cebolla restante,el pimiento verde,un tomatito maduro pequeño,pizca de harina,pochar bien,añadir el vino q se evapore unos mins,y las ramas de tomillo,ligar,poner a las judías las morcilla en este punto como a media cocción, pq he comprobado q sin la ponemos antes se deshacen!
- Saque las carnes de las judías y les di un par de vueltas en el sofrito para q cojan más sabor,pero es opción personal,seguir cuidando las judías y si están ya mas tiernas ,echamos el sofrito y movemos,mejor por las asas sin meter mucho la cuchara de madera, comprobarcq estén guisadas como un cuarto de hora mas o menos,según el producto, probar de sal y apagar, cuanto mas reposen mejor estarán!!
- Compañeros ,como las lleve a casa de unos amigos, y como comprobareis sólo quedó este plato,para mi hija q no pudo ir,de puro milagro!! Jajjaj besos!!
