- En esa paella, incorporamos un chorrito de aceite y una vez caliente agregamos las gambas, las hacemos un pelín para que vaya soltando el jugo. Una vez que las gambas estén listas incorporamos la cebolla bien picada para hacer un buen sofrito. Mientras que se va haciendo el sofrito, pongo las almejas en agua para lavarlas y los mejillones a hervir para que se abran, el mismo agua de los mejillos lo usaré para rehogar un poco el sofrito.
- Cuando veamos que la cebolla va cogiendo color incorporamos el ajo y el perejil bien picado y removemos, echamos el azafrán, el pimentón dulce y removemos bien.
- Incorporamos la sepia cortada previamente, sofreímos bien y agregamos las almejas que previamente hemos lavado y escurrido, rehogamos bien todo, y una vez que esté todo bien rehogado incorporamos el tomate rallado o frito.
- A ese sofrito que hemos hecho le echamos un poco del agua de los mejillones y los propios mejillones y seguimos sofriendo, cuando veamos que el caldo se va consumiendo agregamos los fideos que hemos tostado y removemos con todo el sofrito bien.
- Cubrimos con caldo hasta cubrir todo bien e incorporamos las gambas, si en el proceso de cocción se necesita más caldo vamos añadiendo también depende de gustos. Dejaremos cocer unos 15 min - 20 min. Una vez que el fideo esté listo apagamos el fuego y dejamos reposar unos 5 minutos. Y estaría listo para disfrutar. Que aproveche!!
